Vegetarian Breakfast

Breakfast can be tricky to navigate especially if your diet is restricted. That is all too common for a lot of vegetarians who feel left out when others are tucking into their meat filled breakfasts. Fortunately, we have compiled a small list of vegetarian breakfast ideas that you can try out the next time you want something filling and healthy:

  • Eggs

Unlike vegans, many vegetarians eat dairy products and animals products such as eggs. If you are an egg eating vegetarian, you can try having some eggs for breakfast. Scrambled with cheese, boiled, omelette or even fried on toast, there are plenty of different ways that you can cook tasty eggs. To top it off, they are easy to make and convenient if you don’t have time for a big breakfast.

  • Muffins

Muffins are also a great option if you want something that you can eat quickly or while on the go. They can be prepared the night before or even a few days before then warmed up each time you want something to eat for breakfast. There are different types of vegetarian style muffins that you can bake including egg muffins, quinoa muffins and fruit-based muffins. You just have to tweak the recipe to include any ingredients you fancy.

  • Oats

Many people love freshly made oatmeal. Not only does it taste good, it is filling and can also be eaten uncooked if you make it the night before with some yogurt and fresh fruit. Another great way to eat cooked oatmeal is to add fruits like bananas as well as some dark chocolate which has many proven health benefits including being packed with antioxidants. Breakfast burritos have grown in popularity in recent years and while many options include meat such as bacon and sausage pieces, they can be altered to cater to vegetarian diets. Try making a breakfast burrito with veggies, eggs and tofu for something protein packed. You can freeze burritos and heat them later on and they are convenient enough to include in your packed lunch.

Be it a tomato and egg or grilled cheese, the sky is the limit when it comes to sandwiches. They are easy to make and don’t require adding fancy ingredients to make them delicious. You can even try out gluten-free bread or rye and other alternatives that are healthy.

Vegetarian breakfast is not as complex as some might believe and as long as you have fresh and good quality ingredients, there are plenty of different meals you can try out on a regular basis.
